What you need:
- 100g sweet potato peeled and finely sliced
- ½ cup of mushrooms finely sliced
- ¼ cup of red onion finely chopped
- 1 whole egg
- 2 egg whites
- 1oz Fat Free Cheese
What you do:
- Place the sweet potato, onion and mushrooms on a non-stick pan and sauté until soft. Put aside on a plate or in a bowl.
- Beat together the egg and egg whites and pour into a hot non-stick pan.
- Wait until the bottom sets and add to the frittata the veggies that have been sautéed on top of it.
- Add the grated cheese and transfer the pan to a hot grill to set the top and to melt the cheese.
