What you need:
- 3 skinless, boneless 150g chicken breasts, cut into cubes
- 3 tbsp. chili powder
- 3 medium red bell peppers, diced
- 1 large onion
- 2 Serrano peppers, minced
- 1 Jalapeno pepper, minced
- 1 large tomato, diced
- Salt and pepper (to taste)
What you do:
- Heat up a large skillet sprayed with Pam.
- Add chicken, 1 tbsp. of chili powder, salt and pepper.
- Brown the meat until no longer pink.
- Remove the chicken from the skillet.
- In the same skillet, sauté the peppers and the onion.
- Add Serrano’s, Jalapeno, tomato and 2 tbsps. of chili powder
- Stir-fry the vegetables for 3 minutes.
- Add the chicken and stir-fry for 2 more minutes.
- Remove from heat and enjoy
