What you need:
- 300g of cooked shrimp
- 3 tbsp. of fat free plain Greek yogurt
- 1 tsp. dried dill
- 3 medium tomatoes
- Salt and pepper (to taste)
- 1 c spinach, finely chopped
What you do:
- In a blender, combine the shrimp, yogurt, spices and spinach.
- Core the tomatoes.
- Stuff the tomatoes with the shrimp mixture and sprinkle some salt on top, if needed.
