What you need:
- 1 cup quinoa
- 2 cup of water
- 1 clove of garlic, minced
- 1 medium bay leaf
- Salt and pepper (to taste)
- 1 tbsp. extra virgin olive oil
- 2 tbsp. freshly squeezed lemon juice
- 1 cup cucumber, diced
- ½ cup green onion
What you do:
- Rinse quinoa in cold water for 4-5 minutes
- Put water, garlic, bay leaf, salt and pepper in a sauce pan and bring to a boil.
- Stir in quinoa and reduce heat to medium. Cook for about 15 minutes. Remove quinoa from heat and cool it for 15 minutes.
- Add olive oil, lemon juice, cucumber and onion and stir well.
