What you do:
- Preheat oven to 350°F (180°C).
- Peel your hard-boiled eggs.
- Divide the sausage into 4 equal portions and flatten each into a thin patty between your palms. Encase each hard-boiled egg in sausage by slowly wrapping a patty around it; then roll in pork rind crumbs. Place on a cookie sheet you've sprayed with nonstick cooking spray, and bake for 20 to 25 minutes.
